University Dining Commons
A residential dining hall reimagined as eight interactive micro-restaurants, doubling throughput at peak without expanding the footprint.
The challenge
The university’s original two-line servery was built for a campus half its current size. Lunch rushes produced 20-minute queues, and the back-of-house couldn’t support the fresh, made-to-order menu students expected.
The design solution
We replaced the linear serving lines with eight themed micro-restaurant platforms arranged around a central seating commons. Each platform carries its own cooking suite, so production happens in front of the guest and load spreads across the room rather than stacking at a single line.
A consolidated commissary in the basement feeds all eight platforms through a dedicated service corridor, keeping deliveries and waste entirely out of the guest experience.
The outcome
Peak throughput nearly doubled while the dining footprint stayed the same. Average wait time fell under four minutes, and post-renovation satisfaction scores rose sharply in the first semester.
