Seven food-hall concepts and a central production kitchen engineered to feed a 24-hour gaming floor without a single closed hour.
The challenge
A resort casino needed to replace an aging buffet with a food hall that could run around the clock, absorb unpredictable gaming-floor surges, and still deliver signature-restaurant quality.
The design solution
A single high-capacity central kitchen anchors seven front-facing concepts, letting each stall run a lean line while heavy production happens out of sight. Redundant cooking and refrigeration keep service continuous through cleaning and maintenance cycles.
The outcome
The hall holds full service 24 hours a day, and covers per hour rose well beyond the buffet it replaced — with a fraction of the labor per seat.
